Tuesday February 28th this year is also known as Mardi Gras, Pancake Day, Fat Tuesday, or Shrove Tuesday.
Where I come from in England we call it pancake day, but the purpose is to spoil yourself with something delicious and sweet before giving something up for lent.
No matter your beliefs, go ahead and spoil yourself with pancakes (or crepes) today. Of course you can also make the american style pancakes which are equally delicious
The recipe is simple and cheap and makes about 8 pancakes:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 3/4 cups whole milk
- 2 large eggs
- 3 tablespoons unsalted butter, melted
In a blender, combine flour, sugar, salt, milk, eggs, and butter
Puree until smooth and bubbles form on top, about 30 seconds. Let batter sit 15 minutes at room temperature, but you can use immediately if hungry!
On medium heat, melt a little butter in a 12-inch nonstick skillet. Add 1/4 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe/pancake is golden brown. For subsequent pancakes, there is no need to add additional butter as the butter in the mixture prevents sticking and allows the crepe to become golden brown.
Loosen edge of crepe with a spatula, then quickly flip. Cook 1 minute more. Slide crepe out of skillet and repeat with remaining batter.
