We are fortunate to have a fig tree in our back yard (turkey fig tree) and the past couple of weeks has shown a huge harvest of the fruit. For the first time in my life, I decided to make fig jam with all the figs collected.
Looking around for a recipe, I found this simple one that requires only the fruit, sugar and a lemon juice. The pectin in the fruit is enough to provide enough consistency to hold it together. I purchased 12 1/2 pint jars from the supermarket for $10.99 and then just followed the recipe and sterilizing directions. The final product of 8 jars is delicious and allows us to share with friends and neighbors. I need to find some fruit or veg for the remaining 4 jars!
Fig Jam Recipe
- 3 pounds fresh figs (stem removed and chopped in quarters)
- 2 cups granulated sugar
- Juice and fine zest of one lemon
